Mac ‘n’ Cheese with a Surprise Ingredient

Just a quickie here to tell you about some GREAT mac ‘n’ cheese we had the other night.

It was a bit of an experiment. I love, as in L O V E, pasta, especially mac ‘n’ cheese. Hubby, not so much, and he loves having his greens. Which got me thinking…

There are some vegetables that lend themselves very well to cheesy goodness, namely Cauliflower and Broccoli. So the other night I steamed some Cauliflower, then made a huge batch of creamy, cheesy mac ‘n’ cheese. Then, added the steamed Cauli, put it in an oven dish and sprinkled it with more grated cheese, (you can never have too much cheese, right?), and a couple of pinches of paprika and baked until the top was lightly browned and slightly crispy.

The whole family loved it. It even makes me feel a bit less guilty about eating all that cheese when there is nice, healthy, vegetable in it! win win. I bet Broccoli would work just as well, and a combo of Cauli and Broccoli would be great too.

I should mention that we are vegetarians, so the usual ham or bacon that gets added to mac ‘n’ cheese is out for us.
